St. Louis Gooey Butter Cake with cheese cream topping


 Gooey Butter Cake è una delle ricette tradizionale a St. Louis ( Missouri ) insieme ai ravioli fritti sono ricette nate per sbaglio che però hanno conquistato una grande popolarità . Gooey Butter cake per che un pasticere di origini tedesche ha sbagliato la ricetta di questo dolce per il caffe forse nel lontano 1930 come raccontano i siti wikipedia,  what's cooking America e tanti altri . Nei anni '70 si poteva aquistare questo dolce da caffe in quasi tutte le pasticerie tedesche della città, e poi alcune compagne come sono Entenmann's e Haas che producono dolci hanno iniziato la loro produzione 

Oggi potete trovare tante ricette in rete, quasi tutte preparate con un impasto che dalle loro parti si trova facilmente in ogni negozio: la yellow cake mix . Una polvere pronta preparata con farina, zucchero e latte in polvere alla quale si aggiungono le uova, il burro, vaniglia- Cercando sempre in rete ho trovato anche delle ricette da preparare in casa la yellow cake mix con latte in polvere o con latte fresco( ho scelto la variante con latte fresco perchè è quello che avevo in casa) .

 E' un dolce molto ricco di calorie con tanto burro, zucchero e chi vuole aggiungere anche altro come la crema di formaggio spalmabile, la cioccolata, le noci, nocciole, burro di arahidi o soltanto preparare la crema con limone o cocco, l'impasto come una red velvet trova tante ricette in internet, facile da preparare e di sicuro molto, molto buone.

Non conoscevo questo dolce ma conoscevo la città non soltanto da quendo avevo studiato i stati uniti d'america a geografia ma  nel lontano 1985-1986 mia madre è stata là in vacanza ed è tornata con tanti ricordi che non erano soltanto i regali e le photo ma anche i suoi racconti .. e si.. come raccontava mia madre sembrava una verà Shéhérazade. 


Ingredienti per l'impasto

250 gr farina 00
1 cucchiaio lievito in polvere per dolci
1 pizzicco di sale
125 gr burro morbido
160 gr zucchero
2 uova 
185 gr latte fresco ( io ho aggiunto soltanto 110 gr )
vaniglia 

ingredienti per la crema di formaggio

225 gr formaggio cremoso ( io ho usato 300 gr)
2 uova 
160 gr zucchero ( anche questo nella ricetta da dove mi sono inspirata era troppo 2 cups )

- mescolate tutti gli ingredienti e versate l'impasto in una teglia 
- mettete la teglia con l'impasto nel frigo e scaldate il forno a 175-180°C
- preparate la crema di formaggio mescolando il formaggio con lo zucchero usando il mixer, aggiungete un uovo alla volta solo dopo che il primo è stato incorporato benne
- togliete dal frigo la teglia e versate sopra la base la crema
- infornate a 175-180°C per 40-45 minuti o soltanto quanto basta per otterene i bordi dorati .

Lasciate raffreddare e spolverate con zucchero a velo e poi tagliate a quadrati. Non è un dessert ma un dolce da caffè .

ingrediente pentru aluat

250 gr faina
1 lingura de praf de copt
1 praf de sare
125 gr unt inmuiat ca o crema
160 gr zahar
2 oua 
110 gr lapte
vanilie



ingrediente pentru crema de branza

300 gr brinza crema ( cea care se intinde pe piine)
2 oua
160 gr zahar

zahar pudra

- pregatim aluatul amestecand toate ingredientele
- varsam aluatul intr-o tava 50*23 cm si o tinem in frigider cit timp pregatim crema de branza
- incalzim cuptorul la 180 °C 
- amestecam branza cu zaharul si mixam adaugand pe rind cite un ou si abia cind acesta s-a incorporat bine adaugam si al doilea ou si iar mixam ca sa se incorporeze  si el
- scoatem tava din frigider si varsam peste aluat crema de branza
- introducem tava in cuptorul gata incalzit si coacem 40-50 minute la 175-180° C sau pina cind marginel devin maroniu auriu

Ca sa o putem servi, lasam prajitura sa se raceasca apoi o presaram cu zahar pudra si o servim taiata in bucati patrate.

"A legend about the cake's origin is included in Saint Louis Days...Saint Louis Nights (ISBN 0-9638298-1-5), a cookbook published in the mid-1990s by the Junior League of St. Louis. The cake was supposedly first made by accident in the 1930s by a St. Louis-area German American baker who was trying to make regular cake batter but reversed the proportions of butter[4] and flour.
John Hoffman was the owner of the bakery where the mistake was made. The real story is there are two types of butter "smears" used in a bakery: a gooey butter and a deep butter. The deep butter was used for deep butter coffee cakes. The gooey butter was used as an adhesive for things like Danish rolls and stollens. The gooey butter was smeared across the surface, then the item was placed in coconut, hazelnuts, peanuts, crumbs or whatever was desired so they would stick to the product.
Hoffman hired a new baker that was supposed to make deep butter cakes, but got the two butter smears mixed up. The mistake wasn't caught until after the cakes came out of the proof box. Rather than throw them away, Hoffman went ahead and baked them up. As this was around the Great Depression that was another reason to be thrifty. The new type of cake sold so well, Hoffman kept producing them and soon, so did the other bakers around St. Louis.
Another St. Louis baker, Fred Heimburger, also remembers the cake coming on the scene in the 1930s, as a slip up that became a popular hit and local acquired taste. He liked it well enough that Mr. Heimburger tried to promote Gooey butter cake by taking samples of it with him when he traveled out of St. Louis to visit other bakers in their shops. They liked it all right, but they couldn't get their customers to buy it, with reactions tending to regard it as looking too much like a mistake, and "a flat gooey mess".[5] And so it remained as a regional favorite for many decades.

almost all the recipe that I find use the yellow mix cake,  you can prepare it at home using a powder milk  so I bring the recipe from here and I try to do it using a homemade yellow mix cake with milk ( liquid not powder).


ingredients for the cake

2 cups ( 250 gr) flour
1 tbsp baking powder
1 pinch of salt
1/2 ( 125 gr) cup butter softened 
1 1/4 cup ( 160 gr) sugar
2 eggs 
3/4  cups ( 185 gr) milk ( liquid).. but I used only 110 gr
vanilla



ingredients for the cheese cream topping:

8 oz ( 225 gr) cheese cream .. but I put 300 gr because I like cheese
2 eggs
1 1/4 (160 gr) sugar 

confectioner's sugar

- prepare the crust mixing all the ingredients
- put the mixture in the bottom of 13 by 9-inch baking pan and keep it in the fridge still you prepare the cheese
- mix cheese with sugar and add one egg, mix well and only after add the second egg
- bring out from the fridge the pan and pour over the cheese mixture
- bake for 40 to 50 minutes at 375°F (175-180° C) or until the edges become brown

For serving let it cool in pan before sprinkling with confectioner's sugar and cut in squares.
