A culinary tour around the world :Russia - Selyodka pod Shouboy (Dressed Herring) and Russian Borsch

Selyodka pod Shouboy (Dressed Herring)

thick salted herrings
potatoes
carrots
red beets

mayonnaise
Boil vegetables until they are ready ( you can boil vegetables in 1 pan). Boil eggs hard.Peel skin from herrings, cut them along the spine. Take all bones away. Cut herring meat into very little pieces and always check for bones.
Take a large dish.
Grind potatoes and make a layer of it.Put herring meat. If you like onion, you can put little pieces of onion on the herring.Then spread mayonnaise evenly (thin layer). Use a fork to plane the layers. Then goes carrot (grind, put, spread). Then you do the same with eggs and beets.
Spread mayonnaise on the beets and grind 1 egg on it to make the dish beautiful. This salad must look like a cake.
Put the dish in the fridge for an hour.

Russian Borsch

Even the original recipe it is an ukrainian one we can found also the russian borsch recipe.

"Originally borsch came from Ukraine and each region has its own borsch recipe. Today there are literally thousands of ways to cook it and "as many recipes for borsch as there are Russians": Ukrainian borsch, Belarusian borsch, Borsch without potatoes, Borsch with beans, Galitsky borsch, Hetman borsch, Dneprovsky borsch and so on. Borsch got its name from the most important ingredient, beets, which were called borsch in old Slavic."


INGREDIENTS FOR BORSCH
• 1 beef shank (or a t-bone steak)
• ¾ cabbage
• Carrots (1 large or a few small carrots)
• Celery (1 stick)
• Tomatoes (1-2 medium size)
• Beets (with no green tops)
• Potatoes (2-3 small)
• Onion
• Garlic
• Bay leaf
• Tomato paste (1 small can)
• Salt
• Sunflower oil
• Baby dill
• Sour cream*

COOKING STEP-BY-STEP
• First step is making the broth. Place your meat in a large pot and bring to the boil, then reduce heat, cover and simmer until the meat is tender (app 1-1.30 hour).
• A very important thing to do while cooking borsch is to make a "zazharka" (fry up). While the borsch is heating up you need to sauté in sunflower oil with finely chopped carrots, onion and celery
• Take the meat out and discard the bone. Chop meat and put it back in the pot along with sauté carrots, onion and celery
• Slice the beets (into strips), add some broth to the pan and place the beets into the pan. Add tomato paste. Cover and let it cook for 5-7 minutes (medium heat).
• While the beets are preparing, cut the cabbage and potatoes and put them in the pot. Bring to the boil.
• Sprinkle the beets with vinegar (1 tablespoon) and sugar (1.5 tablespoons)
• Add beets to the borsch
• Add salt to the borsch
• Mix chopped tomatoes with garlic and salt and add to the bowl
• Add one bay leaf, cover and leave for at least 15 minutes.
• Bon appetite!
Russians often use sour cream for different dishes and definitely for borsch. Simply add a tablespoon of sour cream to your soup bowl and sprinkle with a little bit of chopped parsley and/or dill

Far bollire le verdure fino a quando non sono pronti.
Pelate le aringhe e tagliatele lungo la spina dorsale che togliete. Tagliate l'aringa in pezzi molto piccoli. Prendete un piatto da portata e mettete a strati le patate grattugiate, le carote, le uova e con la maionese tra di loro .. per ultimo sarà quello di barbabietole rosse grattugiate o potete anche aggiungere sopra di loro uno di maionese e ornare con uovo sodo . Se volete potete aggiungere anche della cipolla(la mia insalata è senza cipolle).
Questa insalata deve apparire come una torta.
Mettete il piatto in frigorifero per un'ora prima di servire.
E' un antipasto.

"Originariamente borsch provenienti da Ucraina e in ogni regione ha una propria ricetta borsch. Oggi ci sono letteralmente migliaia di modi di cucinare e il numero di ricette per borsch sono tante: borsch ucraino, bielorusso borsch, borsch senza patate, borsch con fagioli, Galitsky borsch, Hetman borsch, Dneprovsky borsch e così via. Borsch ha preso il suo nome dal più importante ingrediente: le barbabietole, che si chiamavano borsch in slavo antico."

INGREDIENTI PER borsch
• 1 pezzo dicarne bovina (con osso)
• ¾ cavolo
• Carote
• Sedano (un gambo o come me sedano rapa a cubetti)
• Pomodoro (1-2 di medie dimensioni)
• Barbabietole rosse (già cotte)
• Patate (2-3 piccole)
• Cipolla
• Aglio
• foglia di alloro
• Passata di pomodori grossa o pomodori pelati
• Sale
• Olio di girasole
• aneto
• panna acida *

• Il primo passo è fare il brodo. Mettere carne in una pentola grande e portate ad ebollizione, poi ridurre il calore, coprite con un coperchio e far cuocere fino quando la carne è tenera.
• Una cosa molto importante da fare durante la cottura è borsch a fare una "zazharka" (soffrito)nel olio di semi di girasole con le carote, cipolla e sedano tritate.
• Disossare la carne. Tritate la carne e riporla nella pentola insieme al soffritto, lasciate bollire.
• Tagliate le barbabietole (in strisce) ( io le ho grattugiate)e lasciate cuocere per 5-7 minuti insieme al pomodoro in una padella.
• Mentre si stanno preparando le barbabietole, tagliate il cavolo e le patate e metterle in pentola. Portare ad ebollizione.
• Cospargete le barbabietole con aceto (1 cucchiaio) e lo zucchero (1,5 cucchiai)e versate tutto nella pentola quando il cavolo e le patate sono pronte.
• Salate
• Mescolate pomodori tritati ( o passata di pomodori grossa ) con aglio e versate nella pentola, lasciate cuocere un po' e aggiungete una foglia di alloro, coprite e lasciate riposare per almeno 15 minuti.
• Buon appetito!

cartofii, morcovii si sfecla se fierb apoi se rad
asezam un strat de cartofi, peste, maioneza, si continuam cu morcovi, oua si ultimul de sfecla intre care punem mereu maioneza . Radem separat albusele si galbenusele .. Putem peste sfecla sa punem din nou maioneza si sa ornam cu ou fiert.
Putem sa punem si ceapa tocaa marunt si tinuta minim 15 minute in apa si otet in parti egale si apoi scusa ca sa isi piarda mirosul si taria ( eu nu am pus ceapa ).
Putem sa folosim si hering afumat chiar daca reteta originala este cu peste sarat dar daca nu gasim altfel atunci folosim afumat pe care insa il tinem in lapte inainte ca sa isi mai piarda de mirosul de afumatura asa cum este explicat in reteta din blogul Rossa di Sera ... unde gasiti si alte moduri de a orna aceasta salata ( in pahar sau modul absolut original al Giuliei in stil sushi :-)


Russian Borsch (Bors rusesc)

ingrediente pentru bors
• 1 bucata de carne de vită cu os
• ¾ varza
• Morcovi
• ţelină
• rosii (1-2 mijlocii)
• sfecla rosie
• Cartofi (2-3 mici)
• ceapa
• Usturoi
• foaie de dafin
• pastă de tomate / rosii in bulion
• Sare
• ulei de floarea-soarelui
• smântână

• Intii pregatim supa de carne. Punem carnea la fiert intr-o oala mare , cind incepe sa clocoteasca dam focul mic, acoperim si lasam sa fiarba pina e carnea moale.
• Un lucru foarte important este sa pregatim "zazharka" (prăjim ceapa, morcovii si telina taiate cubulete in putin ulei).
• Scoatem carnea si o dezosam. taiem bucatele carnea si o punem la loc in supa impreuna cu morcovii, ceapa si telina calite.
taiem sfecla felii sau bastonase ( eu am ras pe razatoarea mare)si o punem in tigaie impreuna cu rosiile taiate bucati .. lasam sa se caleasca 5-7 minute
• intre timp adaugam in supa varza (taiata marunt) si cartofi. Le fierbem.
• stropim sfecla cu oţet (1 lingură) şi cu zahăr (1 lingura si jumatate)si le varsam in supa impreuna cu sarea
• Se amestecăm rosiile in bulion tocate cu usturoi si le varsam in oala cu supa
• Adăugaţi o frunză de dafin, acoperiti si lasati 15 minute cu focul stins sa se odihneasca inainte de a servi.
Se serveste cu smintina si marar .

A culinary tour around the world: Ethiopia


This is my entry for Joan's Culinary Tour Around World: Ethiopia


Ethiopian honey bread

5 g fresh yeast
1 egg
550 g all-purpose flour
300 ml lukewarm milk
6 tablespoons honey
6 tablespoons melted unsalted butter
salt
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
2 ground cloves

- mix fresh yeast with 1 tablespoon honey, add the egg, milk, salt, cinnamon, coriander,cloves and the rest of honey
- add flour and half of melted butter and knead
- rub your hands with a little melted butter and continue kneading until the dough is smooth and elastic
- shape the dough like a ball and place it in a buttered bowl
- let the dough draped with a kitchen towel until the dough rises and doubles in bulk
- pre-heat the oven at 220 °C and bake the bread in the middle of the oven for 10 minute and at 170 °C for another 40-50 minutes, until the top is crusty and light golden brown

italiano :


Pane etiope al miele

ingredienti

5 g lievito di birra fresco
1 uovo
550 g farina 00
300 ml latte tiepido
6 cucchiai miele
sale
1/2 cucchiaino coriandolo macinato ( semi)
1/2 cucchiaino cannella macinata
2 chiodi di garofano macinati


- sciogliere il lievito con 1 cucchiaio di miele, aggiungiamo l'uovo sbattuto con il latte, sale, cannella e chiodi di garofano e il resto di miele
- aggiungiamo la farina e metà burro
- spalmiamo sulle mani il resto di burro e impastiamo fino quando diventa elastico
- lasciamo l'impasto in una ciotola imburrata , coperto con un canovaccio fino quando raddoppia
- mettiamo l'impasto sulla teglia ( coperta da carta da forno) e inforniamo a 220 °C per 10 minuti e a 170°C per altri 40-50 minuti o fino quando diventa dorato.

Viene servita con burro e miele.


in romana :

Paine etiopiana cu miere

5 g drojdie proaspata
1 ou
550 faina 
300 ml lapte caldut
6 linguri miere
6 linguri unt moale
sale
1/2 lingurita seminte de coriandru macinat
1/2 lingurita scortisoara macinata
2 cuisoare macinate


- topim drojdia cu 1 lingura de miere, amestecam oul cu laptele, restul de miere, sarea , condimentele si adaugam in drojdie
- adaugam faina si jumatate din unt si framintam bine
- ne ungem miinile cu restul de unt si framintam pina cind aluatul devine elastic
- lasam sa dospeasca acoperit cu un servet de pinza pina isi dubleaza volumul
- coacem la 220 ° C pt cca 10 minute si la 170°C pt alte 40-50 minute sau pina cind devine aurie

se serveste unsa cu unt si miere la micul dejun

Maschere dolci di Carnevale - Masti de Carnaval - Shortbread Carnival masks





ingredienti per 2 maschere:

100 g farina 00
50 gr burro morbido
1 cucchiaio di acqua fredda ( se vi serve, dipende dalla farina)
1 cucchiaio di zucchero
scorza di limone o vaniglia

codette per ornare le mascherine
zucchero a velo per spolverare
nastrini colorati

- impastate la frolla e lasciatela a riposare nel frigo
- stendete una sfoglia di ritagliate a forma di maschera ( potete usare una maschera disegnata prima su un foglio di carta )
- fate i fori per gli occhi e con uno stuzzicadenti anche i fori per i nastrini
- adagiateli su una teglia coperta da carta da forno e infilate sotto dove c'è il posto del naso un pezzo di carta da forno, cosi:



- ornate con le codette colorate e infornate a 180°C fino quando sarano dorate
- lasciatele intiepidire e infilare i nastrini dopo di che spolverate con zucchero a velo


in romana:

ingrediente pt aluat :

100 gr de faina
50 gr unt
1 lingura de zahar
1 lingura de apa rece dc este nevoie numai
coaja rasa de lamiie sau vanilie

bombonele colorate
fir colorat
zahar pudra

- facem un aluat pe care il lasam la rece apoi intindem o foaie si decupam 2 masti ( dc nu puteti sa decupati direct cu un cutit, cu mina libera, desenati intii masca pe o foaie de ghirtie pe care o folositi drept tipar , decupati gaurile pt ochi si faceti cu o scobitoare gaurile pt a putea introduce firul colorat si ornati cu bomboanele colorate
- asezati mastile pe tava cu hirtie de copt, asezati in dreptul nasului un ghemotoc de hirtie si coaceti la 180 °C pina cind vor fii aurii
- lasati sa se raceasca putin si introduceti firul colorat apoi presarati cu zahar pudra

Ingredients for the dough:
 100 g flour, 50 g butter, 1 tablespoon sugar, 1 tablespoon cold water only if needed, grated lemon peel or vanilla; colored candies, colored string, powdered sugar. 

Make a dough and let it rest in the fridge, then roll out a sheet and cut out 2 masks (if you can’t cut them directly with a knife freehand, first draw the mask on a sheet of paper and use it as a template; cut out the holes for the eyes and use a toothpick to make the holes for inserting the colored string, then decorate with the colored candies).
 Place the masks on a baking tray lined with parchment paper, put a small ball of paper where the nose is, and bake at 180°C until golden. 
Let them cool slightly, insert the colored string, then sprinkle with powdered sugar.
