Mix the chestnut flour with the water until smooth and free of lumps, then cook thin crêpes in a very hot, lightly oiled pan.
Fill the ciacci with ricotta (mixed with a little sugar). Drizzle honey on top at the end if you like.
Ingredients
For the shortcrust pastry:
200 g flour
100 g hemp flour
100 g lard
2–3 tablespoons yogurt or sour cream
1 egg yolk
For the filling:
150 g mixed cow-and-sheep ricotta
4 tablespoons yogurt
1 egg
1 egg white (the one left from the pastry)
2 tablespoons sugar
Canned apricots, well drained
Prepare the pastry and let it rest in the refrigerator while you make the filling by mixing all the ingredients together. Roll out the pastry on a baking tray lined with parchment paper. Spread the filling over the pastry, fold the edges slightly toward the center without covering the filling, and arrange the well-drained apricots on top of the ricotta mixture.
Bake at 180°C until done.
Grill the eggplant slices in the oven, brushing them with a little oil and turning them on both sides.
In a bowl, mix the beaten eggs with the yogurt, crumbled cheeses, salt, and pepper.
Grease a baking dish with oil, arrange the eggplant slices, add pieces of tomato, and pour the egg-and-yogurt mixture with the cheese over the top.
Bake at 180–190°C for 30–35 minutes.
Once cooked, drizzle with za’atar mixed with olive oil, or simply olive oil with thyme or oregano if you don’t have za’atar.
Let it cool slightly before slicing and serving.


250 g ricotta
100 g butter
250 g flour
10 g baking powder
a pinch of salt (optional)
jam of your choice
Mix the softened butter with the ricotta. When it becomes a cream, add the sifted flour (and the salt), and finally the baking powder.
Work the dough briefly and let it rest in the fridge for at least 30 minutes.
Flour the table (or pastry board) and roll out the dough to a thickness of about half a centimeter.
Use a glass or round cutter to cut out circles.
Place a small amount of jam in the center of each one.
Fold each disc in half and seal the edges well.
Place them on a baking tray lined with parchment paper.
Bake in a preheated oven at 180°C for about 20 minutes.
Dust with powdered sugar once they have cooled.
For the filling, I made an “instant” jam:
one apple, one pear, and one orange
Wash and peel them; remove the cores from the apple and pear, and peel the orange completely if you like. Weigh them, cut into small cubes, place them in a pot, and add sugar (half their weight — for one measure of mixed fruit, use 1/2 measure of sugar).
Cook like a jam, until the sugar dissolves, the fruit softens, and the mixture thickens without being too liquid.
Add 1 heaping tablespoon of raisins and a sprinkle of cinnamon.
Let cool.
Note: with the same dough I also made savory snacks. Roll out the dough, cut with any shape you like, place the snacks on a baking tray lined with parchment paper, grate Grana Padano or Parmesan over each one, and bake until they turn golden.


Torta di riso con ricotta e mele
In una pentola si mette a bollire il latte insieme all’acqua, a 100 g di zucchero, a un pizzico di sale e alla vaniglia. Quando il latte inizia a bollire si toglie la vaniglia e si aggiunge il riso, lasciando cuocere a fuoco medio e mescolando di tanto in tanto finché il riso avrà assorbito tutto il liquido. La consistenza deve rimanere morbida, non asciutta. A questo punto il riso viene lasciato raffreddare completamente.
Nel frattempo si lavorano bene i tuorli con lo zucchero rimasto, poi si aggiungono la ricotta, la scorza di limone e la vaniglia. Gli albumi vengono montati a neve con un pizzico di sale. Quando il riso è freddo si incorporano la panna fresca, eventualmente le mandorle tritate, la crema di tuorli e ricotta e infine gli albumi montati.
Le mele vengono sbucciate e affettate, poi leggermente saltate in padella con un po’ di zucchero, oppure si possono usare al naturale. Vengono mescolate con un cucchiaio di albumi montati per renderle più morbide in cottura.
Si prepara una tortiera da 25–30 cm rivestita con carta forno. Si versa metà del composto di riso, si aggiunge uno strato di mele e si copre con il rimanente composto. La torta viene cotta in forno preriscaldato a 200°C per 40–45 minuti. Una volta pronta, si lascia raffreddare completamente e si spolvera con zucchero a velo.
Ingredients:
300 g rice
1 L milk
200 ml water
250 g ricotta
100 g heavy cream
3 eggs
200 g sugar
grated peel of 1 lemon, vanilla, salt

Bring the milk, water, 100 g of the sugar, a pinch of salt, and the vanilla bean to a boil. When it starts boiling, remove the vanilla bean and add the rice. Cook over medium heat, stirring occasionally with a wooden spoon. When the rice has absorbed all the milk, it is cooked — the mixture should not be too dry, but slightly soft.
Remove from heat and let it cool completely.
Meanwhile, beat the remaining sugar with the egg yolks. Add the ricotta, lemon peel, and vanilla.
In a separate bowl, beat the egg whites with a pinch of salt until stiff.
When the rice is cold, add the heavy cream, the chopped almonds, the yolk–sugar–ricotta mixture, and finally fold in the beaten egg whites.
Line a round baking pan (25–30 cm) with parchment paper. Spread a layer of the rice mixture, then a layer of sautéed apples (mixed with 1 tablespoon of the beaten egg whites), and another layer of rice on top.
Bake in a preheated oven at 200°C for 40–45 minutes.
When done, let it cool completely, then dust with powdered sugar before serving.
